Salar Smoked Salmon Tacos

Ingredients

  • 1/4 red cabbage - finely shredded
  • 1 red onion - finely sliced
  • 1 red chilli - deseeded and finely chopped
  • 1 garlic clove - deskinned and finely chopped
  • 1 teaspoon toasted cumin seeds
  • Juice of 1 lime
  • 1/2 teaspoon salt
  • 2 tablespoons chopped coriander, plus more to garnish
  • 500g Salar Smoked Salmon
  • 2 avocados - sliced
  • 200g cherry tomatoes - quartered
  • 4 spring onions - chopped
  • 8 fresh corn tortillas or 8 taco shells
  • 2 limes cut into quarters

Instructions

  1. In a bowl mix the cabbage, onion, chilli, garlic, coriander, cumin, salt and lime juice.
  2. Warm the tortillas
  3. To assemble, spoon some cabbage mix onto the centre of the tortilla, then the salmon, a few sliced of avocado, tomato and spring onion. Top off with some coriander and a squeeze of lime.
  4. Serve with Mexican rice and beans.
  5. Delicious!
